Carrot Cake Cupcake Recipe

230g Plain Flour
1 tsp Baking Powder
1/2 tsp Bicarbonate of Soda
2 tsp Ground Mix Spice
155ml Sunflower Oil
4 Eggs
180g Soft Brown Sugar
180g Grated Carrots
55g Walnuts
2 tbsp Orange Juice

Butter Cream Icing
170g Butter
340g Icing Sugar
1 1/2 tbsp Vanilla Extract
2tbsp Milk

Start by combining the Flour, Baking Powder, Bicarbonate of Soda and Ground Spice. Then Put to one side.

In a separate bowl mix the oil, eggs and sugar.

Now Combine the two mix's

Then you can put in the Walnuts, Orange Juice and Carrots. Be sure to squeeze any excess water out of the carrots before putting them in.

Take them out the oven an leave to cool.
Whilst cooling you can make the buttercream icing. I have chosen to make vanilla Buttercream.

Combine the Icing Sugar and Butter together. The put in the milk and Vanilla Extract.

Now Decorate the cakes with the Buttercream and a sprinkling of orange peel.

Now To Enjoy!
